Oh so easy chocolate covered cookies

Jaia likes to watch you tube videos of other kids doing their “after school routine” or making doll school supplies or cooking or crafting etc… You get the idea. It irritates me to no end that she sits online and never DOES anything. Well sometimes she does – like earlier this week.

While we where at Trader Joe’s last week, she talked me into getting a bag of white chocolate chips and a package of chocolate sandwich cookies – So we could make the cookies this vague child online made. Oiy –

Here’s how WE made chocolate covered cookies –


Gather your goods – white chocolate chips (we also used plain chocolate) – chocolate  cookies-


It’s so easy peasy. First you melt the chocolate in a double boiler. We used an old jelly jar that was the perfect size for dipping AND it fits a whole bag of melted chips!


Put the chips in the jar and place the jar in a sauce pan filled about 1/2 way with water. Bring the water to a simmer all the while watching the chocolate so it does not burn or so the water does not boil over.

When the chocolate is nice and smooth and gooey – take your cookies and using a fork, dip the cookies in the chocolate and put them to harden on a parchment paper lined tray. You can use the tines to hold the cookies while dipping by sticking the tines in the yummy center of the cookie.  Dip fast because sometimes the cookies fall into the chocolate!

When our white chocolate was half  way empty, I dumped half a bag of chocolate chocolate chips in  with it. Then I added a few drops of peppermint extract.  Using the fork method – continue to dip until you can’t dip anymore!

When they are on the tray hardening – feel free to add sprinkles!


The best ones were the milk chocolate with peppermint!
