Oven roasted tomatoes

We had an awesome dinner last night – using a chicken marinade recipe out of the new “Whole 30” cook book. It was a mango based marinade and I questioned telling everyone one what the base was but I shouldn’t have been. My whole family loved the chicken and have requested it again. This time on wings “like the recipe says Mom”.


As a side to our chicken I made oven roasted tomatoes. A simple simple recipe that paired well with the poultry and couscous we had.

You’ll need few ingredients. Tomatoes (enough each person can have 1 halve of the tomato – or more if you choose), pepper, salt, pesto, and parmesan cheese.

Preheat the oven to 425 –


Slice the tomatoes in half and place them in a baking dish. Season with salt and pepper-


Slather with pesto (any brand will do)


Sprinkle with parmesan cheese –


Roast for 20 ish minutes. Longer if you want a softer tomato, shorter if you’d like firmer tomatoes.



Serve with your favorite main course.

It’s a simple dish, yes, but full of flavor and eaten with the couscous? Oh my – yum!
